1st need to be cleared: do you mean a normal human becomes immortal but not trough vampirism or as long as he/she is immortal but not a vampire?

anyway there's a category for god and goddess, they're immortal.
how about
xxxHoLic and Tsubasa Reservoir Chronicles

I can't believe no one has mentioned Noblesse yet. Sure, it is actually Manhwa istead of manga, but I consider it a non-issue.

Many of it's characters are mistaken for vampires and many have similar qualities to vampires, but the actual difference between the immortals and "actual" vampires are discussed in series. Though I can understand the views of those who would argue that it is a straight out vampire series.

I'm about 4 years late and it looks like the OP isn't that active anymore, but I needed to recommend https://mangaupdates.conexionsite.com/series.html?id=132393

To You, The Immortal : Shounen, Action, Philosophical

Don't be fooled by the cover art, the girl is "not really" the MC.
MC can take any shape of dying things under a certain condition.
This is a journey about a being who gained consciousness and developed its knowledge, and continued evolving.

Bonus point: No unnecessary long dialogue, beautiful art, easy to read and engaging.

A very, very good manga that can be enjoyed by everyone. You definitely won't want to miss this.
