Because the manga doesn´t include one martial arts style that is practiced in real-life. Martial arts media doesn't need to be "realistic" -Crouching Tiger, Hidden Dragon is a prime example- but you can´t apply the tag to the Japanese equivalent of Superman and call it a day.

The original manga started off as a parody of martial arts films so you would have had a leg to stand on before Goku became an adult but the rest of the series vastly overshadows that aspect even then too.
